Due Diligence Checklist
What is Due Diligence?
If a customer accuses you of poisoning them, or an inspector is investigating an outbreak of food poisoning linked to your premises, then a legal defence of Due Diligence may be used by you to protect yourself and your business.
This means that you are able to show that you took all reasonable precautions to keep the food safe, including buying good food, storing it correctly, handling, preparing, cooking and serving it safely. You should also be able to show that your premises are well maintained, in a clean condition and that your staff are suitable trained.
